Bikini Recipe

Serves 10 guests

To make the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (makes 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Directions

To prepare the Citrus Syrup: Put all the components inside a pan, heat until it reaches a light boil, agitating until the sugar dissolves. Then, take off the burner and leave to reach room temperature fully. Transfer into a clean bottle, seal and refrigerate it in the fridge, where it will keep for around four weeks.

To make Premix: Pour every liquids into one big jug, leave to sit for an hour, then filter it best through cheesecloth, to ensure it's completely strained.

When ready to serve: Pour 85ml of the batch mix into a stirring glass containing ice, and agitate lightly for about 60 seconds to cool it down. Strain into a cold coupe glass or similar, decorate with some cranberries and complete it using a light spray of the essential oil over the top.
